Dan has tried and tested almost every baking technique, and the recipes in his latest book mix the latest science with good, old-fashioned kitchen wisdom to create everything from the crispest flatbreads and simple scones to gluten-free loaves and pumpkin and ginger cupcakes.
Originally from Australia, Dan is the author of the acclaimed The Handmade Loaf. He also has a very popular baking column in The Guardian; and writes frequently for Sainsbury's Magazine.
